I had been craving congee for awhile and decided to try making it instead of spending $6 on a bowl at the Chinese place next to my work. (Congee is a rice porridge that is popular in Asian countries). This is perfect when it’s cold out, when you’re sick, or if you just need something warm to eat.
What you’ll need:
- 6 cups water
- 4 cups low-sodium chicken broth
- 1 chicken breast
- 1 cup rice
- white pepper to taste
- thinly sliced scallions, for garnish
- Add water, broth, chicken, and rice in a large pot on medium-high heat. You’ll have to occasionally stir so the rice doesn’t stick to your pot. Reduce the heat to medium and cook at a simmer for about 1 hour.
- Turn off the heat, and remove the chicken to a cutting board. Cut the chicken into small shreds and pieces then add it back into the porridge. Add white pepper to taste, and garnish with scallions (and cilantro if you want).
